This quesadilla was born one evening when we needed a quick supper, and so I fried up some quesadillas. I made three kinds: pizza quesadillas with chicken; ranch chicken quesadillas; and these ham, mustard, and white cheddar quesadillas. Believe it or not, these were the definite winner!
These are so simple to make, a child could do it! I’m not even gonna call it a recipe. That’s what is so great about quesadillas. You gotta try pretty hard to wreck one up. (As long as you don’t let it burn!)
The tang of the mustard and the sharp white cheddar are certain to excite your taste buds. If you love tangy flavors like sharp cheese, you gotta try this. Here, the mustard really makes this quesadilla sing! I’m not usually much of a mustard fan, but I love it in this quesadilla.
For the cheese, feel free to use whatever you have on hand. The sharp cheddar that I used here emphasizes the tang of the mustard. It was just what we had on hand at the time. Sometimes the best recipes are made when you have to be creative.
I made the quesadilla pictured here with my homemade flour tortillas. They are the best! Again, use whatever you have on hand. Although, seriously, you should try making tortillas at least once!
For frying, I used coconut oil. Have you ever checked out the benefits of coconut oil? Seriously, why would you use anything else? Coconut oil is our cooking and baking oil of choice.
I have not entered amounts for the ham, cheese, mayonnaise, and mustard. Just add whatever amount you please. Build it like a sandwich. And feel free to use your creativity on these ham, mustard, and white cheddar quesadillas! Enjoy!
